Our Bellwether roaster uses electricity rather than fossil gas at the machine. Power from our own solar panels helps translate Sierra sunlight into controlled roasting energy.
Bellwether’s ventless system uses an internal afterburner to neutralize smoke and harmful volatile organic compounds before air exits the roaster. This supports a zero-VOC roasting environment without confusing the roast cycle with a claim that the entire coffee lifecycle has zero impact.

BEFORE THE ROASTER
Our current sourcing standard prioritizes ethically and sustainably farmed coffee, with many selections meeting organic or bio-natural processing standards. Practices and certifications vary by lot, so we identify origin, process and producer information in the individual roast dossier rather than making one universal claim for every coffee.
Healthier soils improve nutrient cycling, water infiltration and resilience while reducing erosion—the biological foundation of a productive farm.
Responsible land management can protect water resources, pollinator habitat and the diversity above and below the soil.
Long-term sustainability must include economic viability, knowledge-sharing and stronger capacity to adapt to climate and market shocks.
Careful cultivation and post-harvest processing protect sweetness, fruit and aromatic complexity before a roaster ever applies heat.

IMPACT, LOT BY LOT
Our current Pokmas Walida sourcing narrative reports that 20% of cooperative proceeds support village K–12 education, alongside agricultural innovation.
Produced through the knowledge of more than 1,200 Shanta Golba smallholders; current sourcing information identifies support for roads, educational infrastructure and agricultural training.
Our current Sareni lot comes from various smallholder farmers around Buesaco, Nariño. It is washed, sun-dried on patios and decaffeinated through the EA sugarcane process, as documented in Covoya’s lot specification ↗.
OUR CLAIM STANDARD
We distinguish direct roasting facts from broader lifecycle claims. “All-electric” describes the machine. “Solar-powered” describes our local energy source. “VOCs neutralized” describes Bellwether’s internal emissions-control system. Farming certifications, cooperative programs and community benefits are reported coffee by coffee as sourcing information permits.
